While the mushrooms are naturally degrading the bitter qualities of the coffee, they symbiotically infuse 1,3 1,6 beta-glucans directly into the coffee beans.
During the fermentation process the mushrooms also breakdown various toxins such as mycotoxins, aflatoxins and ochratoxins; some as much as 75%.
By using our various mushroom strains we are able to achieve unique flavor profiles and aromas, such as cinnamon.
First, we sterilize the substrate to prepare for inoculation.
We then inoculate a substrate with the mycelia.
Next we let the mycelia ferment with the substrate.
Lastly, we dry the product down.
Using low grade Arabica or Robusta coffee beans your company could see upwards of a 50% savings to your top line.
Enhance the flavor profile of lower grade Arabica by using our technology to drastically reduce the bitter molecules. With less bitterness you can use a lesser grade bean to make a premium product.
